Thermal degradation assessment of canola and olive oil using ultra-fast gas chromatography coupled with chemometrics

چکیده
ABSTRACT Oil blending is often used to enhance the properties of vegetable oils. The admixture of a more thermally stable oil makes the resulting blend more suitable for use in frying. A new method of quality assessment of vegetable oils used in frying is presented in this paper. In this method, ultra-fast gas chromatography coupled with flame ionization detector and chemometrics is employed. Principal component analysis was used for data processing. The results obtained with this method were compared with the results of the Rancimat test and sensory evaluation. It is demonstrated that the addition of olive oil improves the stability of rapeseed oil, and also changes its flavour and aroma profile. In addition, it was found that ultra-fast GC coupled with chemometrics is an effective tool for the assessment of the quality of edible oils. The proposed method does not require sample preparation, and the total time of analysis is less than 2 min. GRAPHICAL ABSTRACT

Advantages of thermal stability of virgin olive oil over canola and frying oil
The aim of this study is to evaluate the effects of thermal processing of virgin olive oil, canola and frying oil on chemical oxidative indices (peroxide, p-anisidin value and oxidative stability), acid value and fatty acid compositions. The oil samples were exposed to heat treatment at 180 °C and qualitative parameters were determined at 0, 60, and 90 min after thermal processing. The...
متن کاملQSRR models of veterinary drugs in milk in ultra-performance liquid chromatography coupled to time of flight mass spectrometry
The veterinary drugs residues are also important pollutants found in milk, since veterinary drugs are commonly used in cattle management. Considering the role of milk in human nutrition and its wide consumption throughout the world, it is very important to ensure the milk quality. A quantitative structure–retention relationship (QSRR) was developed using the partial least square (PLS), Kernel P...
متن کاملSimultaneous Analysis of Metabolite Residues from Degradation of Dithiocarbamates in Cereals Using Liquid Chromatography Coupled with Tandem Mass Spectrometry
Background and Objectives: Dithiocarbamates are groups of fungicides used to control pests of agricultural products. Analysis of these pesticides with liquid and gas chromatography instruments is associated with various problems due to the presence of metal groups in the structure of these compounds. Therefore, one of the ways for analysis the pesticides is to check the level of decomposition...
متن کاملMultivariate Data Analysis of Thermally Treated Sicilian Extravirgin Olive Oils. Coupling of Electronic Nose, Gas Chromatography-mass Spec- trometry and Rheology Techniques
In this work we describe the chemical and physical changes of Sicilian extra virgin olive oil (EVOO) heated at 90° in a conventional oven for one month. The effects of the thermal treatment along days on volatile compounds and viscosity were monitored using electronic nose, gas chromatography and rheology. Data obtained by these techniques were combined in order to create a data matrix for the ...
متن کاملDetermination of Polycyclic Aromatic Hydrocarbons in Olive and Refined Pomace Olive Oils using HPLC/FLD
ABSTRACT: In this study, an analytical method is developed to determine 15 polycyclic aromatic hydrocarbons (PAHs) in olive and refined pomace olive oils using HPLC coupled with a fluorescence detector. The standardised method of ultrasound-assisted solvent extraction consisted of liquid–liquid extraction with organic solvent and purification on C18 and Florisil bonded-phase cartridges was modi...
